Tom’s Mustard Greens with Mushrooms and Bacon

Tom got inspired at Whole Foods today. We were shopping for a couple things and he came back with an armload to cook up for our lunch. As you may or may not know, he’s becoming quite the cook. Yay! Want to try his recipe? Here goes :

1. Wash mustard greens and mushrooms, then set to drain. Devein the mustard greens, leaving large leafy pieces to steam. Slice the mushrooms (Tom used those brown button mushrooms)and some fresh garlic if you like.

 

2. Chop and sauté your bacon, adding the garlic and those delish dark mushrooms, along with any herb mix you have on hand .

 

3. Let the mushrooms cook in the bacon drippings.

 

4. Remove the mushroom mixture to a bowl momentarily. Deglaze your pan with any wine you have on hand, and let the greens steam in one tablespoon of Balsamic vinegar. Cover. This is our “covered” pan. Yes, that IS our old pizza pan used to cover the steaming greens.

5. Greens should be cooked but not totally limp. Add the mushroom mixture back in with the steamed greens. Stir till warmed.

6.Slice some tomatoes for your side dish. Drizzle with olive oil, coarse sea salt and maybe a little dried basil.

You’re done! Here’s how it looks after Mike has had a serving. Simple, tasty and fast.
